Montana has two regional delicacies: bison meat and huckleberries. And Revelry in Bozeman serves both.
Like many regional foods that are widely available, they can vary significantly in quality, but at Revelry, each one is served with intention, creativity and deliciousness amid its menu of high-end pub fare.
Locally sourced ingredients are a speciality here, so you can enjoy fungi pizza made with whichever mushrooms are in season, lots of local meats and beers on tap from around the state.

When I visit ahead of the 4th of July weekend, Revelry is bustling with both tourists and locals. Determined to try a huckleberry dish that showcases what can be done with the native fruit (and doesn’t involve sweet pastry pie), I opt for the huckleberry fennel salad and am not disappointed. It has a base of rocket and fennel, and is enhanced by a vinaigrette and whipped chèvre – both made with huckleberries – and then topped off with pistachios and fresh berries. I relish every bite.

Revelry is a chic spot – it’s all brick, wood, metal and glass on the interior with a smart terrace outside. It wouldn’t look out of place in Shoreditch or Williamsburg, which is a departure from many of the quintessentially American dining experiences in nearby Montana towns. Both have their own charm, but if you’re looking for a trendy eatery with outstanding dishes, this is the place.
